With the spring upon us and the summer months not that far away, it’s time to move on from the warm stews and soups and into crisp and cool foods and that are filling but do not make you want to plop yourself in front of the TV. Having a salad as a main dish has it’s benefits and with the right ingredients can also be tasty and filling so that your not reaching for that bag of chips or box of cookies a short time after. This salad is great but the one catch you have to be a lover of anchovies which quite a few are not but it does not mean you can not have a go at it and find out if anchovies have won over your heart. This dish is quick and easy for those days or nights that time is not your best friend. The crumbled feta cheese mixed in gives it a distinct taste and gets your taste buds popping.

Pasta Salad with Anchovies Recipe
Prep Time: 10 minutes Cook Time: 12 minutes Servings: 6
400g of penne pasta
50g of canned anchovies
2 cups of cucumber, diced
1 cup of tomato, diced
1/2 cup of feta cheese
1 1/2 cups of Italian salad dressing
1 tsp of sea salt and black pepper to taste
|Preparing Pasta Salad with Anchovies|
1- Cook Pasta as per package directions, cool and drain, set aside.
2- Chop up cucumber, tomatoes and anchovies.
3- Mix pasta with cucumber, tomato, anchovies, feta cheese, italian dressing and salt and pepper.
4- Place in fridge for two hours to chill before serving.
5- Enjoy !!!
